WW - Day 31
What a wonderful weekend we had. Spectacular weather, lots of hanging out, and lots of time in the kitchen working on dishes for the holiday weekend and for the week ahead. Some of my experimentation resulted in some terrific recipes:
Adele’s Black Bean Dip
2 cans black beans, rinsed and drained
1 (4oz) can green chilies
1 roma tomato, diced
1 clove garlic, diced
handful of fresh cilantro, chopped
3 TBSP lime juice
1 TBSP white vinegar
3 shakes of Tobasco
½ TSP kosher salt
freshly ground pepper
Blend in food processor and chill. Serve with fresh veggies or chips.
½ cup = 2pts.
One point Potato Salad
2 lbs red potatoes, quartered
Boil these in generously salted water until tender.
Drain and chill in refrigerator overnight.
½ Vidalia onion, chopped paper thin.
Soak onion slices in ice water while making
the dressing:
½ cup cider vinegar
1 TBSP grey poupon (or dijon-style) mustard
1 TBSP lemon juice
½ TSP kosher salt
freshly ground pepper
Fresh dill, chopped, approx 1/8 cup (?)
Flat leaf parsley, chopped, approx 1/8 cup (?)
Whisk together.
Drain onions and combine with chilled potatoes and dressing in big bowl and chill.
1 cup = 1pt.
FOOD: Great local food this weekend, which coincides with the completion of my new favorite book, "Animal, Vegetable, Miracle" by Barbara Kingsolver. We picked up some canning equipment on Sunday and got rocking on a quart of amazing strawberries we purchased at the Farmer's Market Saturday morning. Rob is excited about the possibilities, as am I -- but this makes a particularly enjoyable project, when the beautiful food is bountiful!
MOOD: Still on a "high" from the weigh-in, but also looking for other opportunities to get physically active and enjoy the food around me. I did a "Yoga for Everybody" dvd yesterday afternoon, which was extremely basic but which prompted some persperation at the temples... Again, I'm trying to mix it up and keep my body wondering what will happen next. The early morning walks are now standard routine, and I enjoy them immensely.
