WW - Day 10

FOOD: I am munching on an incredible black bean salad that I made over the weekend. This makes a little over 6 (1 cup) servings:
- 2 cans black beans
- 3 bell peppers, chopped (one each of red, green, and yellow -- or your pick)
- 1 can or corn, or corn from 2 cobs
- 1/2 red onion, diced (I soak these diced pieces in cold water for awhile to take the edge off, it seems to help my digestion of them as well!)
- 2 garlic cloves, pressed
- 1 tsp cilantro, or more if fresh
- 4 tbsp olive oil
- 4 tbsp red wine vinegar
- 1 tsp lime juice
- fresh ground pepper
- salt
Mix together and dole out into 1c tupperware containers to take for lunches. I figure around 3.5 points per 1 cup serving. Holy smokes is it yummy. I mentioned to Rob that I thought it would be spectacular over grilled tuna and he agreed. On other food fronts, the cherries are amazing right now. I can't get enough! And as a treat I picked up a pint of Cherry Garcia Frozen Yogurt last week. I didn't dip into that until last night. A 1/2 cup is 3 points and oh... my... is it delicious stuff. Even Rob, who hates frozen yogurt and all of its low-fat brethren, really liked the taste I gave him. Wonderful, wonderful.

Adele, thou shalt not suffer, there is plenty of yummy food.

MOOD: Well, I walked solo today -- cooler weather this morning made Rob sleep a little extra, which was fine. I actually enjoy walking alone. I get lots of thinking done on my own. Right now I'm thinking how it would be so good to have some money in my bank account because things are awfully tight right now. And what do you know, someone approached me right out of the blue, wanting to buy a watercolor print! Thank you God, for you are very good to me.
