Day 11 - spring has sprung

FOOD - Yesterday...I've forgotten. No wait -- I remember I had a wonderful salad with honey-roasted chicken on top for dinner. And I had a bowl of regular Total for breakfast. I really don't remember much else. Oh yes -- I had a peanut butter and honey sandwich for lunch. That was really outrageously yummy. There are truly a zillion different ways I like my peanut butter. Okay, so TODAY, I had eggs and toast for breakfast with V-8 and coffee. Lunch was leftovers from the restaurant on Friday night. I've snacked on a Trail Mix Bar and 2 string cheese sticks and a handful of peanuts. Tonight we are trying a recipe for Pork Medallions with Creole Honey mustard sauce and some green beans with mushrooms (can't wait!). For dessert we are trying another recipe: Dr. Pepper Chocolate Cake! There is actually Dr. Pepper in both the cake AND the frosting. So there it is: I am PLANNING ON MISBEHAVING!

MOOD - What a gift this day has been. Temps in the upper 60s -- we have all the doors and windows open, trying to get rid of the winter "housitosis" -- I actually read a chapter of "The Paradox of Choice" outside in the backyard on a lawn chair. In the middle, I put the book down, closed my eyes, and let my head rest on the back of the chair -- envisioning freckles popping out on my face. I know the high Tuesday will be 39, so I have no allusions of spring, but I am enjoying the day immensely. And, of course, my personal chef is working hard in the kitchen for us...he's also making our favorite tomato soup for a supper later this week. I'm a very lucky woman.
